A family-owned company and one of the largest foundries in the United States, Wisconsin Aluminum has been making cookware since World War I. Wisconsin Aluminum produces a wide range of griddles, but the extra-large cast-aluminum nonstick griddle is our favorite. Spanning two burners, it is well balanced and heats evenly. Any cooking fat drains into shallow side wells. Despite the griddle’s substantial looks, it’s light and easy to manage. It cooks beautifully and is a cinch to clean thanks to its Excalibur nonstick coating.

This well-balanced, roomy, and surprisingly lightweight pan spans two burners. The grids are well spaced, running on the diagonal instead of straight across, and sear in deep, rich grill marks, which add a pleasant charred accent to vegetables and meat. Cure it first with a quick wipe of oil. It will accommodate six chops or burgers, and they’ll cook in short order. While they’re resting, grill peppers and mushrooms to accompany them. Cleanup is a snap.
